Yokoi's Vinegar LogoFor Edo-mae sushi chefs, Yokoi Vinegar has always been a primary vinegar choice for shari (seasoned sushi rice).  As the only manufacturer located in the birthplace of Edo-mae sushi, Yokoi Vinegar has been a part of sushi’s development among various Michelin star establishments.

For over 80 years, Yokoi Vinegar has maintained both traditional production methods of creating authentic umami rich akazu (red rice vinegar) from sake lees and mild rice vinegar (clear rice vinegar) from fermentation of rice.  Often, sushi chefs blend rice vinegars to perfect their shari.
